Soulfood

For 2 persons you need:

200g Spaghetti (or any other kind of pasta)
50g pine nuts
125g Ricotta cheese
1/2 untreated lemon (you need the paring and the juice)
italian herbs such as basil, rosemary, oregano
salt & pepper

Cook the pasta "al dente" according to the instructions,
roast the pine nuts in a pan (without oil!) slightly until they are slightly brown and smell good.

Peel the paring of the lemon into lemon zests, squeeze the juice out of the lemon.
Chop the herbs into small pieces and stir them with the Ricotta cheese and taste it with some lemon juice and lemon zests.
Add salt and pepper if you like.

Put the pasta on your dishes and add the Ricotta cheese mix, sprinkle the nuts over it and serve it.
